- Lemon zest – For a burst of fresh flavor a little lemon zest will brighten the whole dish.

For the Finishing Touches:
- Egg wash optional – If you want an extra shiny finish on your filo, an egg wash will give it that beautiful, golden sheen. Just beat an egg and brush it on top of the filo before baking.
Step 1: Prepare the Filling

Step 3: Assemble the Dish
Prepare the filo pastry – Lay out a sheet of filo pastry on a clean surface. Apply a light layer of melted butter or olive oil. Place another sheet of filo over it and brush it once more. Repeat this process with 3-4 sheets of filo.
Add the filling – Place a portion of the spinach and feta mixture in the center of the filo. Add a halibut fillet on top of the filling.
Wrap the filo – Carefully fold the sides of the filo over the fish and spinach, then roll it up tightly, like a little parcel. Make sure the ends are sealed well to prevent the filling from spilling out during baking. Repeat with the remaining filo and filling.
