  • ½ cup frozen orange juice concentrate – the key to that tangy kick that balances the sweetness
  • ¼ cup butter – for a rich creamy texture
  • ½ cup brown sugar – for a touch of sweetness that enhances the sweet potatoes
  • 1 tsp ground cinnamon – to add warmth and depth of flavor
  • ½ tsp ground nutmeg – bringing a cozy aromatic note to the dish
  • 1 tsp vanilla extract – adding a fragrant subtle flavor

For the Topping:

  • 1 cup pecans – coarsely chopped for that irresistible crunch
  • ¼ cup brown sugar – to caramelize the pecans for a deliciously sweet crunchy topping
  • 2 tbsp butter – to melt with the pecans and brown sugar creating a golden, crispy finish

Optional:

Step 1: Prepare the Sweet Potatoes

  • Peel and chop the sweet potatoes into chunks for easier cooking.
  • Place them in a pot of boiling water and cook until fork-tender (about 15-20 minutes).
  • Once cooked, drain the potatoes and mash them until smooth. To achieve a creamier texture, you can use either a potato masher or a hand mixer, depending on your preference.

Step 2: Mix the Casserole Base

  • In a large mixing bowl, combine the mashed sweet potatoes, frozen orange juice concentrate, butter, brown sugar, cinnamon, nutmeg, and vanilla extract.
  • Stir until everything is well blended and smooth. Taste and adjust the sweetness if needed—add a little extra brown sugar for a sweeter casserole.

Step 3: Prepare the Pecan Topping

  • In a small saucepan, melt the butter over medium heat.
